What is skyr?

The first Nordic settlers to Iceland brought centuries of food-preserving skills with them. Dairy products took on new qualities in Iceland thanks to the unique climate and environment. While Scandinavian´s lost the skills as time passed, the hearty and self-reliant Icelanders improved on them. Skyr is the traditional yogurt of Iceland. It is made by incubating skim milk with live active cultures. The whey, the water naturally found in milk, is then strained away to make for a much thicker, creamier, concentrated yogurt. So to make just one cup of skyr, with all that water going out, you need 3 - 4 times the amount of milk required to make a regular cup of yogurt. As a result of this process skyr comes out with 2-3 times the protein count of standard yogurt.

Why is skyr healthy?

Skyr produced from skim milk is one of the most protein-rich foods one can find. It is filling but low fat. In skyr there is almost no fat, rich of protein and a moderate amount of carbohydrates, which makes it suitable food for those who wish to build a healthy body.
